"Creamy sugar cookie flavor"

Serves 8 | Prep Time 10 minutes | Cook Time 45 - 50 minutes

Why I Love This Recipe

Before I had children, I went skiing and stayed at a lodge where they fed us very well and offered us their recipe book to take that excellent Deer Valley Ranch cooking home. This pie reminds me of that time. It also reminds me of the time my son made it for a friend, but that is his story to tell. I love recipes that invoke memory and spark conversation.

Ingredients You'll Need

1/4 cup flour
1 3/4 cup sugar
1/2 tsp salt
1/2 cup butter, melted and cooled slightly
3 eggs, beaten
1/2 cup buttermilk
1 1/2 tsp vanilla or 1 tsp vanilla plus 1 tsp lemon extract (for tangier flavor)
9 - inch unbaked pie shell

Directions

Preheat oven to 350 degrees.
Combine flour, sugar and salt in medium bowl
Add beaten eggs.

Quickly add slightly cooled butter, so it does not cook eggs; beat some more.

Stir in buttermilk; beat again to thoroughly mix ingredients. Blend in flavoring.

Pour mixture into pie shell and bake for 45 - 50 minutes, until the middle is just a little wobbly (it will firm as it sits). Cool. Serve.

Pairs Well With

Milk or eggnog
