Butterscotch Pudding

Pudding is always a favorite with small children and older folks. It is an easy dessert to have ready in minutes, and usually with ingredients you already have on hand.
Ingredients You'll Need
1/4 c. cornstarch
2/3 c. dark brown sugar
3 egg yolks
1/2 t. salt
2 cups milk, divided
1 t. vanilla
2 T. butter
1 c. whipping cream
1/3 c. sugar
1 t. cream of tarter
Directions
Mix together cornstarch and brown sugar in a saucepan. Add egg yolks and 1/2 c. cold milk and stir together well. Heat remaining 1 1/2 c. milk in microwave on high for 2 1/2 minutes. Turn heat to medium high, stir mixture in saucepan, and slowly stir in hot milk. Cook, stirring constantly, until mixture comes to a boil and thickens. Cook 1 minute. Remove from heat, add vanilla and butter and stir. Let mixture cool in sauce pan until warm but no longer hot. Spoon into pretty glasses, serve immediately if you prefer warm pudding, otherwise cool to room temperature, then refrigerate. When ready to serve, whip cream starting on low speed. When cream begins to thicken, add sugar and cream of tarter and gradually increase speed. When cream is stiff, top pudding with whipped cream and serve immediately. Refrigerate leftovers.
