Buttery Chateau Potatoes

Who can resist new potatoes tender inside and crisp outside swimming in garlic butter?
Ingredients You'll Need
3 lbs. new potatoes
5 cloves garlic, peeled but left whole
5 T. butter
2 T. olive oil
Freshly ground sea salt
Freshly ground black pepper
Fresh parsley, chopped
Directions
Peel potatoes, wash and pat dry. Heat butter and olive oil in an iron skillet (or other oven proof skillet) over medium heat, add potatoes and garlic, and toss regularly to coat potatoes well. Season with salt and pepper to taste, and continue to cook potatoes until they start to turn golden brown. As the butter cooks you may see dark flecks appearing, this adds to the flavor. When the potatoes are golden put into an oven preheated to 375. Roast for 3-35 minutes or until potatoes have a crispy brown exterior. Discard the garlic. Serve the potatoes drizzled with butter and fresh parsley sprinkled over the top.
