CHICKEN NORMANDY

Why I Love This Recipe
Ingredients You'll Need
1 Tbsp. butter
1 medium apple, peeled, cored
and sliced
1 tsp. sugar
1/4 c. apple juice
4 whole chicken breasts,
skinned, boned and halved
(flatten slightly)
2 Tbsp. brandy
1/3 c. heavy cream
Directions
Melt butter or margarine in heavy skillet over medium
heat. Add apple and sugar; cook until apple is just tender, 2
to 3 minutes. Remove with slotted spoon. Add chicken to
skillet and cook until golden, turning once, about 5 minutes on
a side. Add apple juice and brandy; cover and cook over
medium-low heat 15 minutes. Remove chicken; return apple to
skillet with cream. Increase heat to medium-high and stir
until slightly thickened, 5 to 8 minutes. Return chicken to
skillet; spoon sauce over. (Serve immediately.)
Note: Serve over rice, if desired.
