CHICKEN WITH SPINACH ARTICHOKES AND PASTA

This recipe is so easy to make, but special enough even for company. A favorite with the family.
Ingredients You'll Need
2 T. butter
2 T. olive oil
4-6 chicken breasts, cut in half horizontally (or pounded out chicken cutlets)
Freshly ground sea salt and freshly ground black pepper
½ onion, diced
2 cloves garlic, minced
2 can of artichoke hearts, drained and sliced
¾ c. white wine of your choice
¾ c. heavy cream
1 c. parmesan, grated
3 c. baby spinach
½ lemon, juiced
12 oz of GF pasta of your choice, cooked according to package directions
Fresh basil for garnish
Directions
In a large skillet heat butter and olive oil. When hot add chicken, salt and pepper, and brown on both sides, cook until chicken is cooked through. Remove chicken and set aside. Add onion to skillet and cook a minute or two until beginning to become translucent, then add garlic and cook until fragrant. Add artichoke hearts, white wine and bring to a boil. Turn heat down and add heavy cream and parmesan. Cook until slightly thickened. Stir in spinach and nestle chicken down in sauce, cook until hot. Serve over pasta and squeeze lemon over pasta and garnish with basil.
