These chocolate wafers are great to keep on hand to use in making cream filled (think oreos) cookies, they also are great to use for making a chocolate cookie pie crust.
Ingredients You'll Need
1 stick butter, softened (DF use Smart Balance)
1 c. sugar
1 egg
1/4 c. milk (DF use Almond or Coconut milk)
1 t. vanilla
½ t. salt
½ t. baking powder
½ c. cocoa
1 t. zanthum gum
1 1/2 c. GGFG Baking Mix (or baking mix of choice)
Directions
Cream butter in bowl of stand mixer or use hand mixer. Add sugar and egg, beat until fluffy, then add milk and vanilla. Beat lightly. Turn off mixer, add salt, baking powder, cocoa, zanthum gum, and baking mix; stir by hand to moisten, then beat very briefly. Form dough into ball, divide in half, then divide each half in half again, then half again to form 8 balls. Chill in fridge for 30 minutes. Form each of the eight balls into 8 small balls and flatten into a thin circle onto a baking sheet lined with parchment paper. Bake in an oven preheated to 350F for 20-22 minutes, cool for 2 minutes then remove to wire rack to cool completely. Freezes well to keep on hand for making desserts.
