CRUNCHY COLESLAW WITH POPPY SEED DRESSING

Why I Love This Recipe
This recipe is a delicious variation of traditional creamy coleslaw. Fancy enough to serve guests.
Ingredients You'll Need
For Salad:
16 oz. bag of coleslaw mix or your own
10 oz. package frozen peas
small jar of roasted peanuts
For Dressing;
1/4 c. onion, chopped
1/3 c. white vinegar
1/3 c. sugar
1 t. freshly ground sea salt
1 t. dry mustard
1 c. EVOO
1 1/2 T. poppy seeds
Directions
Unless you are using packaged coleslaw mix, cut up your cabbage and set aside in fridge. Thaw peas and set aside in fridge. In a blender make dressing by combining all dressing ingredients except poppy seeds. Blend on high speed. Add poppy seeds. Set dressing aside in fridge until serving time. When ready to serve, combine coleslaw mix, peas, and peanuts in a large bowl. Pour on dressing. Stir together well and serve immediately. You may want to serve peanuts on the side to put on salad as desired in case of any peanut allergies. Also, if there is any leftover salad the peanuts would get soggy if they are in the salad. Refrigerate leftovers.
