Why I Love This Recipe

This is a great filling for those dainty little tea sandwiches. Or it can be spread on crackers.

Ingredients You'll Need

1/2 of a medium cucumber
1/2 tsp. salt
8 oz. cooked shrimp
3 tbsp. cream cheese
2 tbsp. Mayonnaise
1/2 tsp. grated lemon rind
1 tbsp. lemon juice
1/2 tsp. dry mustard
1/4 tsp. pepper
4 tsp. finely chopped fresh dill or 1 tsp. dried dillweed


Peel and seed cucumber, shred into sieve. Sprinkle with salt; let stand for 10 minutes. Place in a clean tea towel and squeeze dry; place in a bowl.

Pat shrimp dry; set a few aside for garnish.

In food processor puree together remaining shrimp, cheese, mayonnaise, lemon rind and juice, mustard and pepper, stir into cucumber along with the dill.

Transfer to a shallow serving dish; cover and refrigerate for an hour or until chilled.

Makes 1 1/3 cups.
