CURRIED CHICKEN WITH AVOCADO

Ingredients You'll Need
1/3 c. butter
2 Tbsp. minced onion
1 stalk celery, diced
1 tart apple, peeled and diced
5 Tbsp. flour
1 Tbsp. curry powder
1/4 tsp. garlic powder
1/2 tsp. dry mustard
3 whole cloves
4 tsp. chicken stock base
2 1/2 c. hot water
1/4 c. cream
2 Tbsp. chutney
4 large, firm but ripe
avocados
Directions
Broil chicken on grill 5 to 6 inches above coals,
turning occasionally. Meanwhile melt butter in large skillet
or saucepan. Add onion, celery and apple; cook about 10
minutes, stirring occasionally. Mix together flour, curry
powder, garlic powder and dry mustard; stir into apple mixture
along with cloves. Dissolve seasoned chicken stock base in
water and stir into apple mixture; cook, stirring, until sauce
thickens. Reduce heat and simmer 30 minutes, or until chicken
is cooked through. Remove chicken from grill and place in
large, rimmed serving dish. Peel and pit avocados; slice into
4 or 6 pieces each. Arrange pieces between chicken parts.
Pour apple mixture over all. Serve with rice and a carrot,
apple and walnut salad.
