Ingredients You'll Need
1 cup flour
1 cup wheat flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1 tsp salt
1/4 cup oil
1/2 cup sugar
2 cups grated zucchini
1/2 cup milk
Combine all dry ingredients in large bowl.
Make a well in the center.
Beat egg until frothy.
Add oil, sugar, zucchini and milk.
Pour into well and stir just to moisten.
Batter should be lumpy.
Fill muffin cups 3/4 full.
Bake at 400 for about 18 minutes.
Do not over bake or they will dry out.
