Why I Love This Recipe
Our family loves Caesar salad and have it often. We prefer to replace the croutons with garlic bread to serve with the Caesar salad.
Ingredients You'll Need
2 heads of romaine lettuce, sliced crosswise
2 T. lemon juice (half of a lemon)
4 cloves garlic, sliced (more or less to taste)
1/2 t. fresh ground sea salt)
1/2 c. EVOO
1/4 c. freshly grated Emilio Reggiano Parmesan (or other good quality parmesan cheese)
GGFG croutons or French bread
Prepare romaine, put in a large salad bowl and chill until serving. Meanwhile, put garlic, lemon juice salt, and egg in a blender and pulse several times until garlic is well chopped. Turn off blender and remove the part of the top so you can add the EVOO while the blender is running. Put back on top, turn blender to high speed and slowly add oil. When mixture is thick, stir in half of parmesan. Chill dressing until serving. To serve the salad, add the dressing and mix well. Sprinkle on remaining parmesan (more if you like), and croutons if using. Serve.
