Why I Love This Recipe
A family favorite. My kids still request this.
Ingredients You'll Need
2 packages instant rapid rise yeast
3 Tablespoons sugar
3 Tablespoons oil
1 Tablespoon salt
1 1/2 cups warm water
3 cups all purpose flour
1 pound hot Italian sausage
12 ounce Ricotta cheese
1 green pepper (sliced)
1\2 white onion (coarsely chopped)
12 ounces sliced mushrooms
Pour 2 packages rapid rise yeast in large mixing bowl add
3 Tablespoons sugar and
1 1/2 cups warm water to yeast, stir well until yeast and sugar dissolve. Set aside yeast until it blooms
NEXT... In same large mixing bowl as yeast mixture, add 3 Tablespoons oil and
1 Tablespoon salt.
3 cups of flour, (add 1 cup at a time stir with a fork as you add flour.) By the 3rd cup of flour you'll need to start using your hand to mix in flour. Knead dough at least 5 minutes.
Dough should be slightly sticky and soft.
Rub your hands with oil and rub around dough and inside of bowl.
Place kneaded dough in the clean greased bowl, cover and set aside in warm area until it rises and double in size.
Punch down and pull out small balls of dough (around the size of a golf ball) and roll into a 10 inch circle.
Spread ricotta mixture (12 oz ricotta and one egg beaten together) on middle of rolled out dough, add toppings.
Any topping works... Topping should be pre- cooked or Calzones will be soggy.
I make mine with
Italian Sausage, Green Peppers,Onion
fold dough in half and pinch ends closed.
Bake at 350 degrees for about 20 minutes or until golden brown. ENJOY with marinara sauce.
