Cantonese steamed salmon

Ingredients You'll Need
2 scallions
2 tablespoons fresh ginger julienned
1 small bunch cilantro
1 1/2 tablespoons light soy sauce
1/8 teaspoon salt
1/8 teaspoon sugar
2 tablespoons water
1 medium salmon, tilapia, grey sole, flounder or fluke. Your choice
2 tablespoons oil
Directions
Give the cilantro a rough chop set aside
Combine soy sauce, salt, sugar and water in a small bowl. Set aside
Prepare your steamer
Fill your saucepan with about 1 inch of water, cover and bring to a boil
Carefully place your steamer basket with the fish.
Cover and steam about 10 minutes
Turn off the heat
Remove steamer basket
Place fish on platter
Spread the cilantro and 1/3 of the scallions directly on to fish
Heat a small saucepan to medium high
Add 2 tablespoons oil
Add the ginger and let lightly brown
Than add the test of the scallions
Next add your soy mixture keep the heat medium.
Cook about 30 seconds
Pour over fish and serve immediately
