Ingredients You'll Need

***For the Crust***
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
***For the Cheesecake Filling***
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
***For the Apple Pie Topping***
3 large apples, peeled, cored, and sliced
1/2 cup granulated sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons unsalted butter
***For the Caramel Sauce***
1 cup granulated sugar
1/4 cup water
1/2 cup heavy cream
2 tablespoons unsalted butter
1 teaspoon vanilla extract


Directions

***For the Crust***


Preheat oven to 350°F (175°C).


In a medium bowl, mix graham cracker crumbs and sugar. Stir in melted butter until well combined.


Press mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.


***For the Cheesecake Filling***


In a large bowl, beat cream cheese and sugar until smooth. Add vanilla extract and mix well.


Add eggs one at a time, beating well after each addition.


Pour cheesecake filling over the cooled crust and smooth the top.


Bake in preheated oven for 50-60 minutes, or until the center is set and the top is lightly browned. Let cool completely.


***For the Apple Pie Topping***


In a large skillet, melt butter over medium heat. Add apple slices, sugar, cinnamon, and nutmeg.


Cook, stirring occasionally, until apples are tender and caramelized, about 10 minutes. Let cool slightly.


Arrange apple topping over the cooled cheesecake.


***For the Caramel Sauce***


In a medium saucepan, combine sugar and water over medium heat. Stir until sugar dissolves.


Increase heat to high and boil without stirring until the mixture turns a deep amber color.


Remove from heat and carefully whisk in cream, butter, and vanilla extract until smooth.


Drizzle caramel sauce over the apple topping before serving.


Pairs Well With

Pairs beautifully with a chilled glass of Riesling or a warm cup of spiced apple cider.
