Caramel Custard

We love Caramel custard. Perfect dessert (Flan) with Mexican food.
Ingredients You'll Need
For the caramel:
3 T. water
3/4 c. sugar
3 T. hot water
For the custard:
6 large eggs
3 c. whole milk
3/4 c. sugar
2 t. vanilla
Directions
To make the caramel, mix 3/4 c. sugar with 3 T. water in a sauce pan. Bring to boil stirring until sugar is dissolved. Boil mixture, without stirring over medium high heat until a golden syrup is formed about 5-8 minutes. Remove from heat, add 3 T. very hot water, stir well. Spoon caramel into bottoms of 6 ramekins and set aside. Meanwhile using a mixer, mix together eggs, milk, sugar, and vanilla. Pour into ramekins. Place in a large baking pan with sides and place into an oven preheated to 350F. Pour a depth of very hot water into pan around ramekins to a depth of 1". Bake 45 minutes. Remove carefully from oven. Set ramekins aside to cool for about 10 minutes. Run knife around edges to loosen, then turn upside down onto serving dishes. Serve warm or chilled.
