Caramelized Spaghetti Squash

An easy and hearty substitute to spaghetti with an opportunity to get creative with sauces.
Ingredients You'll Need
1 spaghetti squash
2 Tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon sage
1/2 yellow onion
2 bell peppers
2 cloves garlic
1 pound ground turkey
1-2 cups tomato sauce
Directions
Cut the squash lengthwise, remove the seeds and innards, and place it on a baking sheet with the flat sides facing up. Lightly coat the inside with 1 Tablespoon olive oil, salt, pepper, and sage.
Set the oven to 465° F and immediately place the squash in the oven. Check on the squash after 30 minutes, especially for a smaller one. A medium-large squash should be ready after 40-50 minutes.
While the squash is in the oven, chop the onion and bell peppers into bite-sized chunks and mince the garlic.
Pour 1 Tablespoon olive oil into a skillet over medium-high heat. Add the onions and cook until translucent, about 2 minutes. Stir in the garlic and cook for another minute.
Add the ground turkey to the pan and cook until most of the pink has disappeared, about 5 minutes. Then add the bell peppers and cook for another 5 minutes. Lastly, add the tomato sauce and heat for 2 minutes.
When ready, remove the squash from the oven and shred with a fork while still warm. Serve with the sauce mixture.
