1 bunch Dutch carrots
40g butter
1 1/2 tablespoons Coles Brand honey
1 teaspoon ground cumin
2 teaspoons rosemary leaves (optional)
4 medium parsnips
Directions
Preheat oven to 190C or 170C fan-forced. Line a large oven tray with baking paper. Trim the tops from the parsnips and peel, shaping the ends to a point. Quarter length ways. Trim the tops from the carrots, peel, and halve if large.
Stir the butter and honey in a small saucepan over low heat until the butter melts. Stir in the cumin. Drizzle over the vegetables, and toss to coat evenly. Arrange in a single layer onto the prepared tray. Season.
Roast the vegetables, turning occasionally, for 40 mins or until tender and caramelized. Sprinkle with rosemary.
