Ingredients You'll Need
12 lbs spring greens mix (baby lettuces, spinach, arugula)
10 mangoes, peeled and diced
8 cups mandarin orange segments, peeled and pith removed
8 cups pineapple chunks, tossed with 1 Tbsp Caribbean spice blend (allspice, cinnamon, nutmeg)
4 large red onions, thinly sliced
4 cups sliced almonds, toasted
Dressing 1: Lime-Herb Vinaigrette Ingredients - 3 cups fresh lime juice, 9 cups extra virgin olive oil, 1 1/2 cups finely chopped fresh cilantro, 3/4 cup finely chopped fresh parsley, 1/2 cup Dijon mustard, 10 cloves garlic minced, salt and black pepper to taste
Dressing 2: Spiced Ginger Vinaigrette Ingredients - 2 cups grated fresh ginger, 4 cups rice vinegar, 8 cups light vegetable or olive oil, 1 cup honey or agave syrup, 2 tbsp ground allspice or pinch of cayenne, 3 tbsp salt
Directions
Toast almonds in a dry skillet over medium heat, stirring frequently, until golden and fragrant (about 5 minutes). Set aside to cool.
In a large bowl, gently toss together spring greens, mango, mandarin orange segments, spiced pineapple chunks, and red onion slices.
Just before serving, sprinkle toasted almonds on top. Serve with dressing on the side.
To make Lime-Herb Vinaigrette: Whisk together lime juice, garlic, Dijon mustard, cilantro, parsley, salt, and pepper. Slowly drizzle in olive oil, whisking continuously to emulsify. Refrigerate until serving and shake or whisk before plating.
To make Spiced Ginger Vinaigrette: Whisk grated ginger, rice vinegar, honey, allspice, and salt until combined. Slowly drizzle in oil while whisking constantly to emulsify. Chill before serving and whisk or shake before plating.
