Why I Love This Recipe

Putu Ayu or Puteri Ayu is one of the Indonesian desserts/snacks originated in Java. It is basically a steamed pandan mini cake with grated coconut on top. Ayu which in Javanese means beautiful is indeed the visual point of this cake because the shape and color of Putu Ayu make a very pretty appearance.

Ingredients You'll Need

2 eggs
100g sugar
150g self-raising flour (shifted)
60g coconut milk
60g pandan juice

120g white grated coconut
A pinch of salt
2tsp corn flour


Mix the salt and corn flour into the grated coconut. Place the mixture into the molds. Set aside

Mix the coconut milk and pandan juice

Beat the eggs with sugar until thick and fluffy

Using a handheld whisk, add in the pandan and coconut milk mixture. Mix well

Lightly fold in the flour into the mixture until combined

Pour the mixture into the moulds

Steam over boiling water for 10 minutes over medium fire

Let the kueh cool before removing them from the moulds
