1 ¼ cup oil
2 c. plain flour
1 tea. soda
2 tea. baking soda
1 tea. salt
(if using self rising flour omit 3,4,5)
3 cups grated carrots
2 cups sugar
2 tea. cinnamon
4 eggs
3/4 chopped pecans
Cream cheese frosting
Directions
Mix oil and sugar.
sift ½ dry ingredients into sugar and oil mixture, mix well.
add remaining ½ of dry mixture.
add eggs, 1 at a time mixing well after each addition.
add carrots.
bake @ 350 in 2 layer pans or 9x13 cake pan for about 30 min. or until middle springs back when touched.
frost cake when completely cooled
store in fridge
