Carrot-Cucumber Salad with Basil & Balsamic Dressing

Why I Love This Recipe
FEATURING: Cucumber, carrot, lettuce, basil, garlic scape (or garlic) and green onion.
A great salad dressing you can use on an array of salads such as this one!
Ingredients You'll Need
FOR THE SALAD
1 lettuce head, washed and chopped into pieces
1-2 carrots, grated
1 cucumber, chopped into small pieces
1/2 green onion, chopped (optional)
A handful of nuts of your choice, chopped into bite-sized chunks (optional)
OPTIONAL: Any other veggies you'd like (tomatoes, shredded white turnips, etc.)
FOR THE DRESSING
1/4 cup balsamic vinegar
2 tablespoons chopped fresh basil
2 teaspoons minced garlic
Kosher salt and freshly ground black pepper
3/4 cup extra-virgin olive oil
Directions
FOR THE SALAD: In a large salad bowl, put the chopped lettuce, the grated carrots and the chopped cucumbers. Add any other vegetable you want to use (if adding anything). Add the green onions and nuts, if using.
FOR THE DRESSING: Whisk together the vinegar, basil, garlic and a generous pinch of salt in a small bowl. Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick dressing. Whisk in a couple turns of freshly ground black pepper.
ASSEMBLY: Serve the salad in bowls. Add dressing when serving.
