Why I Love This Recipe

This is a very flexible, reliable cream base that can be used simply or dressed up with your favorite flavor notes. If you like vanilla, cinnamon or even exotic garam marsala, or less sugar etc, this foundation of cashews and coconut is really adaptable. Adding fruits provides wonderful color and bite contrast. It can be prepared ahead of a meal, and lasts 2 - 3 days in refrigerator.

Ingredients You'll Need

Note: all below ingredients can be found organic:

Raw unsalted Cashews
Can of Coconut milk (either full or reduced fat)
Coconut oil or Coconut manna
Lime or lemon juice, and Zest
Agave syrup or maple syrup. Or thickened reduced simple syrup


1 Cup of cashews rinsed and covered in glass bowl with water overnight. Whole or halves or pieces are fine.

In the morning:
Use 2 large lemons or 3 limes to juice 1/2 cup, and gather 1 tablespoon zest plus 1 tablespoon zest for later adornment if desired.
Put Juice and Zest in either high powered blender or food processor.

Shake the coconut can to mix the hardened cream and water together. If the can is put by a heater vent, the cream is softened, easier to mix. Full fat provides great flavor, reduced fat a bit lighter and is fine to use given fat in cashews.
Add 3/4 Cup of the coconut milk to the blender/processor

Melt 1/4 Cup coconut oil or, if really wanting full fat flavor, use coconut manna (liquefy on stove or 20 second microwave manna)
Add to blender/processor

Use 1/3 to 1/2 cup agave or, if desired maple syrup or reduced simple syrup (50% water/50% ideally raw sugar boiled to dissolved).
Add to blender/processor

Add drained soaked cashews to blender/processor and mix until smooth and creamy - only takes a few minutes

Use rubber spatula and refrigerate for 2-3 hours. Can add to already prepared crust or eat plain.

Pairs Well With

Any and all fruits are delicious with the cashew cream. Add some crunch with granola or pie crust approach. A light whip cream would offer a nice bite in contrast to the dense richness of the cashews.
