Cauliflower and cheese casserole

Ingredients You'll Need
2 tbsp butter
1 onion, halved and sliced
1 cup bacon, cubed
750g cauliflower, cut into small pieces around ½ inch
Sauce
2 tbsp butter
1 cup heavy cream
1 tbsp cream cheese
2 cups cheese, shredded (i prefer cheddar)
salt and pepper to taste
Topping
3-4 slices of cheese
Directions
Preheat oven to 480 degrees Fahrenheit
Cook cauliflower for about 5 minutes, then set aside
In a large pan, melt butter
Add onions and cook for about 1-2 minutes
Add bacon cubes and cook for another 2 minutes
Set aside
In the same pan, melt butter for sauce
Add cream, cream cheese and cheese and cook until completely melted and uniform
Season with salt and pepper
Add onions, cauliflower and mix well
Transfer to an oven safe dish and top with cheese slices
Bake for about 7 minutes
