Cauliflower mash

"Mashed potatoes? Noooooooo... better!"

Avoiding carbs, this gives you the same experience as mashed potatoes, healthier and very tasty.
Ingredients You'll Need
6 slices of bacon, cut into ¼ inch strips
4 cups cauliflower florets (about 17 oz)
4 tbsp cream cheese
½ cup parmesan cheese, grated
1 tbsp dried chives
salt and pepper to taste
Directions
Cook cauliflower florets in lightly salted water, about 10 minutes
In a frying pan, brown the bacon until crispy
Drain cauliflower and put back in the pan to evaporate most of the water (this prevents the mash to become too watery)
In a large bowl, mash the cauliflower to desired consistency
Add cream cheese, parmesan and chives, mix well
Add the bacon and mix
Add salt and pepper to taste
