"Mexican Pork Burrito"

My husband loves Carnitas and always orders them at the Mexican restaurant , so I came up with a smaller version of the meal by using pork chops and making a Carnita Burrito
Ingredients You'll Need
3 boneless pork chops
2 tb butter
salt and pepper to taste
1/4 c chopped onion
1 tb crushed red pepper
1 tsp garlic powder or fresh garlic crushed
1 tb pesto sauce
1/4 c. enchilada sauce
1 can of your favorite re fried beans
1 c cheddar cheese
4 large flour tortillas
Directions
Slice pork chops into bite size portions add salt and pepper . Add butter to a skillet not to hot just medium heat, add pork pieces brown a few minutes and then add onion so they can flavor the meat.as it browns. Add red pepper Add garlic the the pesto sauce. When meat mixture is nice and brown add the enchilada sauce it will cook up quickly. Turn down low or warm while you are preparing the re fried beans. Put the beans in a microwave safe bowl add a spoonful or so of the enchilada sauce and half of the cheddar cheese, microwave for 1 min 12 sec. then mix. Heat the tortillas in a large iron skillet or tortilla warmer. When they start to bubble up turn over and spread the bean mixture over the tortilla then add more cheese and then 1 portion of the meat mixture you will have 4 portions. Turn one end up on the tortilla and roll the tortilla over and brown on that side , take off heat right away....repeat this 3 more times. Serve hot
