Why I Love This Recipe
This cheese toast was born from necessity. We had made a yogurt marinated chicken and a zucchini bake one night and we wanted bread to go with it. Not wanting to make standard garlic toast, I came up with this combination and my family asks for it all the time now. It's still easy and quick, just more flavor!
Ingredients You'll Need
3 T. softened butter (do not use margarine)
3 T. mayonnaise
1/4 c. shredded parmesan or romano cheese
1 t. dried oregano (or less if you prefer)
6-8 slices of crusty french or italian bread 1/2 in. thick
salt and pepper to taste
Preheat oven to 450 degrees. Line a baking sheet with foil for easy cleanup. In a small bowl, mix butter, mayonnaise, cheese, oregano and salt and pepper. Spread a small amount of mixture on each piece of bread and place on the baking sheet. Bake in preheated oven for 8-10 minutes or until bread is slightly golden around the edges and cheese is bubbly. Baking in the oven is preferable to the broiler because it allows the toast to brown without burning the cheese. This recipe is very easy to double or triple. Enjoy!
