Cheese and Onion Empanadas

Why I Love This Recipe
An Argentinian-inspired recipe and the third of my collection.
Ingredients You'll Need
1 sweet onion
1 Tablespoon olive oil
Pepper to taste
2 cups mozzarella cheese
1/4 cup parsley
15 tapas (empanada shells)
Directions
Chop the onion into small pieces.
Coat a small pan with olive oil and saute the onion over medium-high heat until soft. Season with black pepper.
While the onion is cooling, grate the mozzarella cheese and chop the parsley into small pieces.
Heat the oven to 400° F and spread parchment paper along a baking sheet. Fill the tapas with 1 Tablespoon cheese, 1 Tablespoon onion, and a hefty pinch of parsley. Seal the corners and bake for 20 minutes or until golden brown.
