Cheese and Scallion Scones with Green Chili Butter

Why I Love This Recipe
The first bite you take will describe these scones as Flaky, buttery, moist and soft.
Ingredients You'll Need
2 cups all-purpose flour
1 tablespoon baking powder
¼ tsp garlic powder
½ tsp salt
¼ tsp ground black pepper
1/3 cup (75 g) cold butter
1 cup grated cheddar cheese
2 tbsp grated Parmesan cheese + extra to sprinkle on top
¾ cup of scallions chopped
¾ cup heavy cream / milk
3 tbsp of cream for glazing the top / egg wash
Directions
Pre heat the oven to 204C (400F) In a bowl add the flour, baking powder, salt, garlic powder, black pepper and mix well to combine.
Next add the grated frozen butter use a pastry cutter / 2 forks to mix the butter well with the flour. You should get a crumb like texture.
Now add the cheddar cheese, Parmesan cheese and the scallions and mix well.
Make a well in the center and add the heavy cream/milk in the center and slowly bring the flour together with fork until it is lumpy like a muffin dough. (do not over mix)
Use your hands to bring the dough together ( do not knead). flour your surface well and place the dough on your work top. Sprinkle some flour on top. Use your hands to press down the dough roughly into an 8 inch circle and about 1 inch in thickness. Cut into 8 triangles and place them on a parchment lined baking sheet. Brush the top with cream and sprinkle with Parmesan cheese.
Bake them for 15- 20 minutes or until slightly golden. Remove them from the oven and place them on a wire rack to cool/ serve warm with the green chili butter ;)
