Ingredients You'll Need

4 egg yolks
1 can (14 oz.) sweetened condensed milk
1/3 cup lemon juice
1 cup thick applesauce
1 teaspoon grated lemon rind
1 teaspoon vanilla
1/2 teaspoon nutmeg
4 egg whites
1/4 teaspoon cream of tartar
1 cup graham cracker crumbs


Beat egg yolks until combined. Stir in condensed milk and lemon juice, stirring until thick. Add applesauce, lemon rind, vanilla, and nutmeg, and mix well. In a separate bowl, beat egg whites until foamy. Add cream of tartar and continue beating until stiff. Fold into milk mixture. Combine cracker crumbs and butter. Lightly butter an 8x8-inch square pan. Sprinkle half of the crumb mixture evenly over the bottom. Pour in custard mixture. Top with remaining crumbs. Bake at 350ºF for 30 minutes. Turn off heat and

let cool in the oven for another 30 minutes. Do not open the oven during this time.
