Serves 8 | Prep Time 20 min | Cook Time 30 min

Why I Love This Recipe

My husband love this soup and great way to get green vegetables down him.

Ingredients You'll Need

1/2 C butter
1/2 C chopped onion
2 garlic minced
4 C fresh broccoli florets
1 lg carrot chopped
3 C. water or chicken stock
2 C milk
1/2 tsp salt, nutmeg, pepper
1/4 C. cornstarch
2 1/2 C. Shredded Chedder Cheese.


In large pot heat butter , onion and garlic until tender, stir in broccoli, stock, milk and seasoning and bring to a boil. Simmer until the vegetables are tender. Mix cornstarch with water and stir into soup, stir until thick remove from heat and stir in cheese, serve in bread bowls.....cut off top of bread and hollow out the inside and pour in soup or serve in a bowl. You can add crumbled bacon and chives or even sour cream. This serves 6 Note: I made mine a little different this year...I left out the onion and garlic and added onion powder and garlic powder instead, plus I added 1 pkg. of cream cheese to my stock...and because corn starch upsets my stomach I use flour and butte and make a rue to start my soup. It was a big hit.
