Cheesy Corny Cornbread

"A basic, moist GF cornbread, with the addition of whole corn and cheddar."

Our family really enjoys this cornbread, which is really more of side dish than a bread.
Ingredients You'll Need
1 1/4 c. GGFG Baking Mix (or mix of your choice)
3/4 c. cornmeal
1 t. zanthum gum
1/4 c. sugar
2 t. baking powder
1/2 t. salt
1 c. milk
1/4 c. oil
1 egg
For Cheesy Corny Cornbread:
1 can whole corn or frozen corn
1 c. shredded sharp cheddar
1 T. butter
Directions
n a bowl, mix all dry ingredients together well. In a small bowl, mix together milk, oil, and egg. Stir wet ingredients into dry ingredients. If making Cheesy corny cornbread, stir in corn and cheese. Pour into a 8"X8" parchment lined pan and bake in an oven preheated to 425F for 25 minutes or until golden brown and knife comes out with moist crumb.
