Why I Love This Recipe
I love grits and always had them growing up when I visited my grandma is Georgia. This recipe just gives them a little kick and they can be eaten any time besides breakfast.
Ingredients You'll Need
4 1/2 cups water
1 cup grits(not instant)
1/4 teaspoon salt
2 teaspoons extra-virgin olive oil
3 medium cloves garlic, minced
1/2 cup shredded extra-sharp Cheddar cheese
1/2 cup grated Parmesan
1/8 teaspoon cayenne pepper
Directions
Preheat oven to 350F. Coat an 8-inch-square baking dish with cooking spray.
Bring water, grits and salt to a boil in a large saucepan, stirring occasionally. Reduce the heat and simmer until the grits are thick
Combine oil and garlic in a small skillet and cook over medium heat, stirring often, about 1 minute. Remove from the heat.
Stir the oil and garlic into the grits along with the cheeses and cayenne; transfer to baking dish.
Bake, uncovered, about 45 minutes.
