Cheesy Mini Potato Nests

Perfect snackers~~ Great with a pipping hot bowl of Chili~ Janie
Ingredients You'll Need
8 cups(24-oz) of shredded has brown potatoes
1 egg slightly beaten
salt and pepper to taste
1/2 cup sour cream
8 slices of cooked bacon, chopped
1-1/2 cups of fancy shredded cheddar or mild cheddar cheese.(Swiss would be good too as well as a Taco cheese blend)
Combine the potatoes, egg, salt and pepper.
Mix very well. Coat a mini muffin pan very thoroughly and place 2 Tbs of the potato mixture into each cup.
Use your fingers or the back of a spoon to press firmly on the bottom and up the sides of each mini muffin.
Bake at 450 for about 20 minutes( should check after 15 minutes or bake at a lower temperature)
Sprinkle the cheese into each baked potato nest. Return to the oven for 2 minutes. Sprinkle each nest with the chopped bacon and top with some additional cheese if desired.
