Ingredients You'll Need
4 cups chicken broth
1/2 tsp salt
1 cup regular grits
1 cup shredded sharp cheese (divided)
1 cup shredded Monterey jack cheese
2 TBSP butter
6 green onions chopped
1 green pepper chopped
1 garlic clove minced
1 lb fresh shrimp peeled and cooked
1 10 oz rotel tomatoes with green chilies, drained
1/4 tsp salt
1/4 tsp pepper
Directions
Boil broth and stir in salt and grits. Cover, reduce heat and cook 20 minutes. Stir together cooked grits and 3/4 cup of each cheese. Melt butter over medium heat. Add onion, green pepper, and garlic. Saute 5 minutes. Mix all together plus last 3 ingredients. Pour into greased 2 qt dish . Sprinkle 1/4 cup of cheeses on top. Bake at 350 for 30-45 minutes
