Cheesy Stacked Beef Enchiladas

Note: Replace one can of Enchilada sauce with Green Chili Enchilada sauce and omit the Green Chili’s.
Ingredients You'll Need
1 lb. Super lean ground beef (96%)
10-12 Mission Corn Tortillas
1-14oz and 1-10oz Old El Paso enchilada sauce (Medium)
1 small can chopped Green Chili’s
1-1/2 pkgs. 8oz. Fat-free cheese
Chili powder
Salt
Pepper
Garlic powder
Directions
Preheat oven to 350º. Brown ground beef over Medium-to-Medium High heat. Season with Chili Powder, salt, pepper and garlic powder lightly. Drain ground beef when done and add both cans of Enchilada sauce and green chilies. Stir and bring to a boil.
You will layer the corn tortillas, mix and cheese. Dip each tortilla in the mix, and layer on the bottom of a 9 x 11 dish. Usually 3 ½ tortillas more than cover the bottom. Spoon meat mixture on top of tortillas, mix and cheese. Repeat layers until gone. Bake until cheese is melted.
