Cheesy Tex Mex Stuffed Chicken Breast

Our family lived for many years in Oklahoma where we came to love Tex Mex food. This is a healthy chicken recipe we enjoy very much.
Ingredients You'll Need
2 green onions, thinly sliced
2 jalapenos, seeded if do not want a lot of heat, thinly sliced
1/4 c. cilantro, chopped
1 t. lemon zest
1 c. Monterey Jack cheese, shredded
4-6 skinless, boneless chicken breasts, which you have a cut a pocket in the side
salt and pepper to taste
2 T. olive oil
Directions
In a bowl mix together green onions, jalapeno, cilantro, and lemon zest; then toss with cheese. Salt and pepper chicken to your taste, then stuff cheese mixture into the pocket you cut into your chicken. Heat olive oil in an ovenproof skillet and add chicken. Brown chicken in the skillet on both sides until golden. Remove skillet from the stove and put into an oven preheated to 450F for 10-12 minutes or until chicken registers 165F on an instant thermometer. Serve immediately.
