Serves 2 | Prep Time 15 | Cook Time

Why I Love This Recipe

This is a yummy low carb alternative to potatoes

Ingredients You'll Need

4 large Turnips
1 cup Cheddar cheese (shredded)
1 cup Mozzarella
1/2 cup Parmesan (shaved)
1 cup Heavy cream
1-2 cloves Garlic
1 tbsp Fresh thyme
1 cup Broccoli
3 tbsp Butter
1 small Onion
Salt (to taste)
Pepper (to taste)

Preheat the oven to 375°F (190°C). Butter the baking dish to keep it from sticking and set aside.

Peel and slice the turnips thinly using a mandoline.

Place the turnips in a bowl and add salt, pepper, onion, and garlic. Mix well.

Add a layer of the mix in the bottom of the baking dish, followed by 1/3 cheddar cheese, 1/3 mozzarella cheese, and 1/3 broccoli.

Add a bit more butter and top it off with another layer of turnip. Continue the process until you have no more turnip mix left.
