Cheesy Veggie Lasagna : easy & yummy!

Why I Love This Recipe

Ingredients You'll Need

1 pack lasagna noodles

2 packs frozen chopped spinach

2 cups mushrooms (sliced)

1 bell pepper

1/2 cup chopped onion

1/2 cup chopped black olives

1 - 1 1/2 standard size bottle of tomato sauce

2 cups ricotta cheese

2 bags cheese (moz. and parm [top])


Boil lasagna noodles. Cook all veggies in vegetable oil barely covering the bottom. Add sauce. Grease large pan. Add the layers to the pan (bottom to top) as follows - see second list of ingredients.

Bake at 375 for thirty minutes.

tip: Keep aluminum foil on the top of the lasagna for the first 25minutes. Take the foil off the last 5 minutes to melt the cheese on top.
