Why I Love This Recipe

When I was a kid and dad got laid off, Mom had to stretch the budget she started making this casserole. It's made in 1 pan, serve it with hot rolls and a salad and you have a good quick meal for the family.


Ingredients You'll Need

1 cup minute rice
1 can cream of mushroom soup
3/4 cup chopped onion
1/8 tsp. thyme, oregano, garlic salt, and also 1/2 of a bay leaf.
dash of pepper
2 cups of canned tomatoes
1 pound hamburger
6 or more olives
cheese slices


Directions

Brown hamburger and drain. Add onions and cook until tender. Add tomatoes and stir well. Add spices and bay leaf and mix well. Add soup and sliced olives and bring to a boil.Ad rice, and mix well and bring to a boil again. Pour into a greased casserole and top with cheese slice and bake at 350 degrees fro 10 minutes or until cheese is melted, Garnish with sliced olives. (Variation) Leave in skillet cook for 10 minutes covered.Then add cheese slices remove from heat and let stand until cheese is melted and then garnish with sliced olives
