Chicken & Rice Casserole
Why I Love This Recipe
My mom used to make this when I was growing up, and it was one of the first meals I made for my husband when we were dating. It's a hit every time.
Ingredients You'll Need
1/2 stick butter
1-1/2 cup uncooked rice
4-6 pieces uncooked chicken
1 can cream of mushroom soup
1 package dry onion soup mix
Preheat oven to 350
Melt butter and mix it with the rice.
Place this mixture in the bottom of a casserole dish or 9x13 pan.
Rinse the chicken pieces in cold water and dry off.
Place on top of the rice.
Spoon the soup over the chicken & rice.
Sprinkle the onion soup mix over all
Cover with water (about 3/4 of a soup can usually is about right)
Cover and bake for 1 hr and 15 minutes.
Uncover and bake for another 15 minutes.
*cream of chicken soup can be substituted for cream of chicken
*I usually use chicken legs but boneless skinless breasts or thighs also work well.
