Chicken Bacon Potato Bake

Look at all the cheesy goodness! This dish is filling, hearty and comfort food through and through. This is a dish perfect for large families and to give as a covered dish. This recipe freezes particularly well for a quick meal on nights you don't have time to cook. Cover tightly before putting in the freezer and don't add ranch until time to serve. To re-heat, set oven to 350 and warm for 5-7 min. until warm in the center.
Ingredients You'll Need
1/2 Bag of Small Potatoes
1 Lb. Bacon
2 Chicken Breasts
1/2 Tbsp. Garlic Powder
Salt and Pepper (to taste)
2 Cups Cheddar Cheese
2 Cups Mozzarella
2 Tbsp. Buffalo Ranch Dressing
Directions
Preheat the oven to 350 degrees.
Dice bacon and add to a pan over medium-high heat, once cooked set aside a bit of the bacon for a garnish. Add the chicken and cook until juices from the chicken run clear. Season with garlic powder, salt and pepper.
Quarter potatoes and add to a pot with a pinch of salt, adding enough water to cover and bring to a boil.
Drain the potatoes and smash them. Stir the chicken and bacon in with the potatoes. Mix 1 Cup each cheddar and Mozzarella into the mixture and place in a deep sided glass baking dish.
Top the potato mixture with the remainder of the cheese and bacon and bake for 15 min. until cheese is bubbly an melted.
Drizzle Buffalo ranch sauce over the top and Enjoy.
