Why I Love This Recipe

I love this meal because it is healthy. Yet it is a perfect mixture of sweet and spicy. Great meal for a family dinner.

Ingredients You'll Need

1 Tbsp olive oil
1 clove garlic, chopped
4 cups cauliflower rice
1/4 cup scallions, chopped
1/4 cup cilantro, chopped
1 Tbsp lime juice
1 1/4 lbs ground chicken
2 Tbsp taco seasoning of choice
2 cups frozen corn, defrosted
1 tub sour cream
1 bag of Mexican cheese blend
1 head of lettuce (for top)


1- Heat 1 tsp of oil in a large, non-stick sautés pan, add garlic and pinch of salt.

2- Add rice into pan and cook until fragrant and tender, transfer to bowl and allow it to cool before stirring in scallions, cilantro, and lime juice.

3- Heat a large sautés pans over medium heat, add in remaining oil and ground chicken, season with salt and pepper and break in crumbles.

4- When chicken has turned translucent to opaque, add taco seasoning and stir to coat chicken, cook chicken thoroughly.

5- Once ingredients are prepped, assemble your bowls and min together.
