Why I Love This Recipe

I love this delicious and healthy chicken curry bowl. There is zero spice in this recipe, but you could definitely add some if you'd like! This is a great go-to to make something quick and easy that you have made a lot of to have a few times throughout the week.

Ingredients You'll Need

1 lb chicken breast, cut in 1" pieces
1 t salt
1 T whole wheat flour
2 t yellow curry powder
1 T coconut oil
2 cups chopped snow pea pods
1 chopped yellow pepper
1 1/2 cups shredded carrots
1 (13.5 oz) can light coconut milk
1/4 cup chopped fresh cilantro
2 T slivered almonds
2 1/2 cups cooked quinoa


Add cubed chicken to a bowl. In a small dish, add salt, flour and curry and mix well then coat the chicken with the dry curry mixture.

Heat coconut oil in a large skillet then add the seasoned chicken and saute for 3-5 minutes, just as it begins to brown.

Add the snow pea pods and yellow pepper and stir in the coconut milk. Then reduce the heat and simmer for 5-8 minutes, stirring occasionally.

Stir in the carrots and cilantro and sprinkle with the almonds.

Serve in bowls on top of 1/2 cup quinoa per serving.
