Chicken Flautas

Ingredients You'll Need
1/4 cup Mayonnaise or Greek Yogurt
2 tsp Jalapeno (more If You Like It Spicy),Minced
2 tsp Juice From Jalapeno Slices Jar
3/4 tsp Sugar
1/2 tsp Paprika
1/2 tsp Cumin
1/8 tsp Cayenne Pepper
1/8 tsp Garlic Powder
dash Of Salt
Tortillas of choice
Directions
*Prepare creamy jalapeno sauce by combining all ingredients up until chicken in small bowl (this is the taco bell quesadilla sauce recipe and also makes great quesadillas) - keep going for flautas
*Boil chicken, simmer 20 minutes or until chicken is tender (this part is disgusting - so making double batch is good to freeze or have leftovers. Twice as much food, same yucky work)
*Shred/chop chicken with a fork
*Stir all ingredients together and then I use one of the pampered chef scoops - put about 1/4-1/2c mixture in each tortilla - don't want them too full or they will be too messy to eat
*Roll up, leaving ends open (but not too much mix towards the end) and secure with a toothpick
*Heat 1/4 c oil in skillet - fry 3-4 rolls for about 3-4 minutes each, turning until crisp and golden (these will burn fast, but also want to make sure oil is hot enough or the rolls just soak it up)
*Drain on paper towels and eat with sweet chile sauce (or mango jalapeno salsa)
