Chicken Mushroom Burgers

I like to meal prep on Sundays. I typically make all my lunches and like to keep it simple so I make a batch of these and have meals for 4 days. I switch up the seasonings. Sometimes they are Greek burgers with oregano and a pinch of cinnamon, feta and spinach and sometimes more Italian with basil, Italian seasoning and sundried tomatoes. I love them because they are healthy, delicious, very easy to make and so versatile.
Ingredients You'll Need
1 lb. Organic ground chicken (can also use ground turkey, grass-fed beef, veal or lamb)
4-5 finely chopped organic baby bella, shiitake or white mushrooms
1/4 cup cooked, mashed lentils or any pureed bean you like
Cumin, sea salt, freshly ground black pepper, fennel or whatever seasonings you like
Can also add in grated raw organic zucchini or carrots, finely chopped onions, red bell pepper or shallots or about 1/4 cup thawed, organic chopped spinach that has been squeeze dry of excess liquid.
Directions
Combine all ingredients. I use my hands. Form into 4 good sized patties and either cook in non-stick pan sprayed with a little spray oil or on an oiled grill or under broiler until completely cooked through.
If using chicken or turkey be sure to cook completely. With grassfed beef, veal or lamb, cook to your desired doneness.
Pairs Well With
These are great on a gluten free, low carb bun, on a roasted Portobello cap instead of bread and pair well with a salad, roasted potatoes or roasted veggies like cauliflower or broccoli.
