Chicken Orzo Cold Salad

Ingredients You'll Need
2 c. cooked chicken, cubed
8oz. box of Orzo pasta, cooked according to directions
1 cucumber, diced
1 small red onion, diced
1 red bell pepper, siced
1 lemon, zested and juiced
1/4 c extra virgin olive oil
2 T red wine vinegar
6 ounces feta cheese
Directions
cook pasta and cool to room temp.
Add cucumber, pepper, onion and lemon zest to chciken and pasta in large bowl.
Mix in a small jar with lid the oil and lemon juice and vinegar. Shake with salt and pepper to form a thick dressing. Pour over pasta mix and toss. Serve cold or at room temp. ( I sometimes add fresh baby spinach for more color and flavor)
