We love Asian food. Thai dishes are a favorite, Chicken Pad Thai is a restaurant favorite that we can enjoy at home.

Ingredients You'll Need

For the Pasta:
1 lb. chicken breast, cut into bite size pieces
freshly ground sea salt to taste
freshly ground black pepper to tastte
10 oz. rice sticks (noodles)
2 T. peanut or coconut oil
3 eggs
6 green onions, cut in 1" pieces
1 red bell pepper, stripped
1 1/2 c. carrots, cut into matchsticks
2 c. bean sprouts
2 cloves garlic, minced
For the sauce:
1/4 c. brown sugar
1/4 c. soy (or sub orange juice)
2 T. fish sauce (or sub Thai sweet chili sauce)
2 T. rice vinegar
2 T. lime juice
2-3 t. chili garlic sauce
1/3 c. fresh cilantro, chopped
1/3 c. peanuts, chopped


Cook rice sticks according to package directions. In a bowl, mix the sauce ingredients and set aside. Salt and pepper the chicken pieces. Heat a large skillet or WOK over medium heat, add oil, when hot add chicken and saute for 3-5 minutes until nearly done. Stir in green onions, carrots and peppers, cook until barely tender, about 2-3 minutes. Add beans sprouts and garlic. Cook for 2 minutes. Push chicken and veggies to the side, and add egg, scramble egg until cooked then mix with veggies. Drain noodles completely, add noodles and sauce. Stir to incorporate and cook 2-3 minutes. Top with cilantro and peanuts for serving.
