Chicken Pot Pie

This is an Amish recipe. Can also use beef and beef broth. If desired, can use only top crust, omitting bottom crust.
Ingredients You'll Need
Pastry for double-crust pie
3 c cut-up cooked chicken
3 c cooked mixed vegetables
2 T finely chopped onion
1/4 c butter
5 T flour
1 t salt
1/8 t pepper
2 1/2 c chicken broth
Directions
Line pie plate with bottom pastry. In a large bowl, combine chicken, vegetables, and onion. In a saucepan, melt butter; stir in flour, salt and pepper. Gradually add broth. Bring to a boil over medium heat, stirring constantly until mixture thickens. Pour over chicken mixture.
Spoon into pastry-lined plate; place top crust over filling. Seal and flute edges; cut slits in top to vent steam. Bake at 425 degrees for 25-30 minutes or until filling is bubbly and crust is golden brown.
