3 whole chicken breasts, skinned & boned
2 ounces Mai-Fun rice sticks
6 green onions, sliced thin
sliced almonds and sesame seeds, toasted
1 head lettuce, shredded
DRESSING:
1 cup plus 2 tab. apple cider vinegar
3/4 cup sugar
salt and pepper
MARINDADE
1/4 cup sugar
1/2 cup low sodium soy sauce
Directions
Marinate the chicken in sauce for 4 hours and then bake in sauce for 45 minutes at 375 degrees. Pop rice sticks in hot oil until they puff and lightly brown. Shred lettuce, slice onions, cut up chicken. Mix together and add dressing approximately 15 minujtes before serving. When ready to serve add rice sticks, almonds and sesame seeds. Toss and serve. Can add mandarin oranges.
