Why I Love This Recipe

A delicious twist on an old classic


Ingredients You'll Need

1 tbs butter
• 6 bacon rashers chopped
• 1 capsicum cut into medium
slices
• 2 celery stalks finely diced
• 1 onion thinly sliced
• 10 mushrooms medium
sliced
• 2 chicken stock cubes
• 1 1/2 cups water
• 500 g cooked chicken
• 2 cups cream
• 2 tbs cornflour mixed with
about 1/4 cup water
• 2 tbs water
• 1 pinch salt and pepper *to taste


Directions

Heat butter in a pan, then add bacon, capsicum, celery, onion and mushrooms and cook for 3 minutes.


Add crumbled stock cubes, water ,chicken and simmer for 10 minutes over a low heat.


Add cream and simmer for 2 minutes stirring until mixed


Combine cornflour and extra water, blending to a smooth paste, then add to mixture, stir until thickened then season with salt and pepper.
